Spring Mac 'n Cheese (with Truffles)

Who the hell is the CC kidding? He can't afford truffles. But nearly as good is using a cheese that has truffle skin built into it. Yes, it's exactly as good as it sounds.

A few strategic drops of truffled olive oil also do the trick. I got a bottle as a gift >7years ago and I am close to running out finally...

However, the cheese the CC bought had dried out a bit, and this was a great way of using it.
