Food at a roadside dhaba.
Quite ordinary stuff - cauliflowers, chickpeas. Note the color of the carrots - they are red, and not quite as sweet as what are found in the US.
Ending the meal is a glass of masala chai, of course.

The carrots are bizarre. Are they cooked or raw?
They are not "bizarre". They are different.
American carrots have been selected for sweetness. These are far less sweet and are crunchier.
OK- they're 'differently-abled' carrots. But are they cooked? I ask because in the picture, it kind of looks like the red color is cooked in, rather than being the natural color of the carrot.
They are raw, actually. It's what the carrot looks like (peeled.)
They look different. Taste is different too - less sweet, more crunch.
I see them in the New York farmers' markets from time to time quite inconsistently.
